The term ‘duck liver block’ refers to the way a 100% fattened liver product is processed. Unlike entier products, the spices are completely processed with the liver so the taste and texture will be even. Refrigeration takes place in trapezoidal plastic terrine molds - after which the liver regains its former block character. Block terrines are fresh products, they can be easily sliced out of their box and served nicely.
